How it happened

The Making Of The Knot

From a monsoon crossing on a fishing boat to a table by the sea — the chapters that got us here.

2012

A promise on a fishing boat

Two friends came back from a monsoon crossing off the Konkan coast with a bag of kokum, a borrowed recipe book and a stubborn idea: bring that food inland.
2014

The doors open in Argora

Twenty-six covers, one wood-fired oven and a hand-tied sailor’s knot over the pass. We sold out of crab on the first Friday and have not stopped since.
2018

The terrace, and the sunset that came with it

We took the roof, planted it with salt-tolerant palms and set eighteen tables under the open sky. The 6 o’clock light became the most requested seat in the house.
2021

A cellar worth the wait

Four hundred bottles chosen to sit beside seafood — coastal whites, low-tannin reds and a small, fiercely guarded shelf of dessert wine.
2024

Ten years, one knot

A decade on, the kitchen still buys whole fish, still butchers in-house, and still writes the specials on the board an hour before service.
